“Breaded” Chicken Recipe

I made this recipe the other night, and it was just too delicious not to share! If you love Chicken Parmesan, this is a guilt-free version to fill you up and keep you on track during the Whole Life Challenge..enjoy!

“Breaded” Chicken


1 Pound Chicken Thighs

3 Eggs

2 Cups Coconut Flour

1 Jar all Natural Tomato Marinara (Trader Joe’s has a GREAT one!)

Preheat Oven to 375. Dip the chicken thighs into the egg, then coat with the coconut flour and place them in a baking dish. Cover the chicken with the marinara. Bake at 375 for 30 minutes.  Then, Enjoy!

Served with homemade sweet potato fries, delicious!

“Creamy” Crockpot Chicken Tomato Soup

The temperatures are finally falling in Arizona, so it’s time to take out your jackets and boots! One meal I seem to love when the weather drops is soup. I am not much of an elaborate cook, nor do I spend a lot of time in the kitchen, but I wanted to find a good tasting, as well as paleo soup to enjoy during the winter. This soup is quick and easy, and is wonderful in taste, and you can enjoy it feeling guilt-free! Enjoy! – Coach Ashley

“Creamy” Crockpot Chicken Tomato Soup
4 frozen skinless boneless chicken breast
2 tablespoons Italian Seasoning
1 tablespoon dried basil
1 clove garlic
1 14 oz. can of coconut milk
3 Large Tomatoes, diced
1 cup of chicken broth
Pepper to taste

Put all the above ingredients into the crock-pot, cook for 9 hours on low. After 9 hours take two forks and shred the chicken, set the crock-pot on warm till ready to serve!
